HAPPY NATIONAL FRIED CHICKEN DAY!

This is one of those days which bring back so many memories for me.  Not everyone celebrates National Fried Chicken Day but growing up on a farm, fried chicken was at least a once a week supper. My Grandmother and Mother passed down their recipe for delicious fried chicken and I’ve passed it down to my daughters.

Of course, it was much harder for my grandmother.  She had to go outside and wring the chicken’s neck, let it flop around the barnyard until it dropped then pluck and dress the chicken before she could cut it up and fry it for supper.  With my mother it was a little easier.  She could buy a whole dressed chicken from the grocery store and she was an expert when it came to cutting up a whole chicken.  Today we can buy just legs and thighs if you like dark meat or breasts if you like white meat. Now there is no excuse not to fry up a delicious supper of fried chicken, maybe some mashed potatoes with gravy and biscuits. I’m getting hungry.

Here is the recipe modified a little for flavor and ease of frying:

2 cups of buttermilk

1 tablespoon of Salt

1 tsp black pepper

¼ tsp paprika

¼ tsp of garlic powder

½ tsp of cayenne pepper

1 tsp hot sauce

Mix all these ingredients together in a bowl.  Before placing 3 lbs of chicken in mixture, if you are using breasts, cut each breast in half long ways and then in half again making them similar in size to the rest of the pieces.  Coat chicken with buttermilk mixture and refrigerate for 1 hour covering the bowl with plastic wrap.

Mix together the following ingredients for the coating:

1 cup flour

2 tsp black pepper

1 tsp salt

¾ tsp garlic powder

¾ tsp paprika

Dash of cayenne pepper

2 tsp baking powder

Coat the chicken with flour mixture. In a skillet heat 2 cups of vegetable oil.  Add all the chicken to hot oil and brown for 3 to 5 minutes on one side.  Turn the chicken and brown second side 2 – 4 minutes.  Place the browned chicken on a wire rack inside a cookie sheet and bake in 400 degree oven for 15 – 20 minutes allowing the chicken to cook through.  Enjoy

This is one of the easiest fried chicken recipes but if this is still too much work, or like me, you have a story deadline calling your name, there is always KFC.  Happy National Fried Chicken Day.  Mark your calendar and prepare so you don’t forget next year.

Happy 4th of July

My 4th of July celebration will consist of hamburgers and hotdogs on the grill, a large glass of sweet tea, a good book, and sitting under the ol’ shade tree watching my kids play.  That’s the life for me.  Tupelo is a little hot this time of the year and ya’ll just have to relax with a big glass of ice cold sweet tea to really enjoy the 4th of July activities around here.  Oh, there’ll be plenty of things to do to celebrate but guess I’m just a homebody.  I love my little “nest” and really enjoy listening to the sounds of my kids at play.  Hope you enjoy your 4th!
